Martišková, Lenka
Martišková, L. Food waste on the level of retail. Diploma thesis. Brno: Mendel Uni-versity, 2018. The diploma thesis deals with the issue of food waste specifically focused on the retail level. The aim of the thesis is to define those problem areas in which food is wasted. In order to determine the problem of retail trade, it is important to describe the whole food supply chain, which describes connections between retailers and suppliers that provide supply. The practical part of this work consists of data collection and analysis of secondary and primary data. Since there have been no studies in the Czech Republic that would have relevant methodology or quantifiable data, secondary data are used from foreign studies. Primary data will be obtained from smaller retailers through an interview with retail managers and selected suppliers from the supply chain. The interviews and their analysis will identify the categories of foods where there is food waste and the places where this waste occurs.
